Amaretti Cookies (with flour, ground almonds, brown sugar and sweet almond extract; rolled in icing sugar)

Ingredients

3 eggs
6 to 7 ounces of white granulated sugar
6 to 7 ounces of brown sugar
8 ounces of vegetable oil
A small bottle [45 ml] of almond "essenza"
4 tablespoons of water
60 gram package of finely ground almonds
3 teaspoons of baking powder
Flour as needed (at least 3 cups)

Powdered [icing] sugar for rolling

*Almond "essenza" [essence] used to be sold in Italian specialty shops, but now few carry it. One can substitute sweet almond extract for it -- about 4 tablespoons.



Directions

Beat eggs and sugar; add oil, water and almond extract, beat together, then add ground almonds, baking powder and flour (use enough flour to easily form dough into small balls). Flatten the small balls of dough a bit, roll in powdered sugar, and bake at 350 degrees for about 15 minutes.
