Notes

Torrone was (and still is) a big part of the Christmas holiday food traditions in Italy. However, prior to World War II few people actually made "bars" of torrone in the South. Torrone was manufactured in Northern Italy and sold in local grocery shops. Often, the torrone came in pretty miniature boxes and given to children as gifts on Epiphany. As they were available only during the Christmas holidays at that time they were much loved by old and young alike. Now similar boxes of torrone are available in North America year round. In Southern Italy as well as in other areas of Italy those who lived in the countryside made do with honey-glazed almonds during the Christmas holidays. Honey-glazed almonds tastes very similar to store-bought torrone and is also much appreciated by the young and old.... Photo: Mary Melfi.
