Notes

"Pan di Spagna" is Southern Italy's most famous traditional cake. Prior to World War II it was generally made only for weddings, baptisms, First Holy Communions and Confirmations. Cakes were not made for birthdays. However, as soon as Italians immigrated to North America, "pan di Spagna" as well as many other "rich" cakes were done for any kind of party, including birthdays.
