Prior to World War II almond biscotti were generally not made for the Christmas or New Year's holidays in Molise. Sweet fritters and honey-glazed nuts were on the dessert menu. Almond biscotti were reserved for Sunday visitors and for Name Day Celebrations, as well as special events such as baptisms, First Holy Communions, weddings etc. However, as soon as Italians immigrated to North America almond biscotti (There are hundreds of different recipes for this cookie) became the quintessential Italian sweet. Most households made them on a weekly basis, whether or not anyone was coming. The almond biscotti in the photo were made by Nina Melfi.
