X Italian Vegetable and Side Dishes
A Ciabbotele (with peppers, egg plants, mushrooms, tomatoes and eggs)

Ingredients

A variety of cut up veggies, i.e. peppers (mostly sweet but can include some mild hot peppers)
A variety of egg plants, mushrooms and tomatoes
Tomato sauce
2 eggs
Salt and pepper



Directions

Stir fry the veggies while boiling tomatoes and sauce. Mix the stir fries and with the sauce and let it simmer, crack the two eggs and mix altogether, add salt and pepper to your liking.

Serve as is or with other foods....I like mine just like we ate it in Casacalenda, dip in home made bread and eat.


Notes

This is a common recipe during the late summer in Casacalenda, especially in the old days. I owe this recipe to my sister in law (deceased), Angela Corsi (Fantillo), she was a wonderful cook.
