Zucca Gialla (Yellow pumpkin with apple cider)

Ingredients

1 1/2 pound yellow pumpkin
1/2 cup apple cider
2 cloves squashed garlic
Salt & pepper
about 1/2 cup olive oil for frying



Directions

o Cut very thin slices of pumpkin (about 1/8 of an inch).

o Fry the slices in olive oil (frying a few at a time, rather than all of them together)

o Remove the slices of fried pumpkin.

o Discard used oil.

o Put in fresh olive oil, saute squashed garlic.

o Place pumpkin in a decorative bowl.

o Add apple cider and toss.

o Add olive oil and fried garlic.

o Serve immediately (as a side dish with meat).
