Fried Zucchini
Originated from: Casacalenda, Molise, Italy

Ingredients

3 zucchini
1 cup flour
Salt and pepper
Vegetable oil for frying



Directions

Cut the zucchini in thin slices (about 1/4 inch thick each).

Season the flour with salt and pepper and dredge the zucchini slices in it.

Heat the oil in a large frying pan.

Add the zucchini slices in batches and fry for a few minutes on each side until they are golden brown and crisp.

Drain well on kitchen paper.

Remove to a serving dish.




Notes

Zucchini can be fried in all sorts of batters, some of which include milk and/or eggs, but my favourite remains the one my mother did when I was a child. It's incredibly simple, but it allows the taste of the zucchini to dominate, which is a good thing. Photo: Mary Melfi.
