Potato Croquettes
Originated from: Casacalenda, Molise, Italy

Ingredients

3 boiled potatoes, mashed
1 egg
1 tablespoon of home-made bread crumbs
1 tablespoon of cheese (grated Parmesan best)
Salt & pepper

Flour for coating
Vegetable oil for frying



Directions

Mix ingredients well.

Make soft dough.

On a well-floured surface with floured rolling pin roll dough 1/2 thick.

With floured cookie cutter, cut out potato croquettes.

Re-roll and cut trimmings until all the dough is used.

Heat oil and fry the potato croquettes on both sides until they are golden.

Lift them from oil with a slotted spoon and drain on paper towels.

Cool and serve.


Notes

I needed something real quick to give to very young children, so I used my Zia Rosina's recipe and made something that not only tasted like potato chips, but looked like potato chips too. The kids loved them, and I did too. Using a cookie cutter made this delicious recipe very easy to do. Photo: Mary Melfi.
