Croche di patate (Classic Italian Potato Croquettes)

3 boiled potatoes, mashed
1 egg
1 tablespoon of home-made bread crumbs
1 tablespoon of cheese (grated parmesan best)
salt, pepper to one's taste

Flour for coating
Vegetable oil for frying


Mix ingredients well.

Place portions of the mixture in a tablespoon, and make it take its shape.

Continue to make the portions in this manner.

Flour the portions individually, and then fry them till golden.
