Stracciatella with Semolina (with chicken broth, eggs, Parmesan cheese, semolina and parsley)

Ingredients

8 cups Chicken broth
4 large eggs
4 tablespoons Parmesan cheese, grated
2 tablespoons semolina
1 tablespoon parsley, finely chopped
1/8 teaspoon nutmeg (optional)



Directions

o Make chicken broth.

o Beat eggs.

o Add Parmesan cheese, semolina to the beaten eggs. Mix well.

o Bring chicken broth to boil.

o Stir in cheese and egg mixture, stirring constantly, until the eggs are cooked.

o Season with parsley.

o Serve warm.


Notes

This is a very typical "stracciatella" recipe which is a rather famous Italian-style soup. There are hundreds of similar recipes on the internet. Mary Melfi.
