Ingredients
8 cups chicken broth
1 onion, chopped
2 tomatoes, chopped
3/4 cup rice
3 cups fresh cicoria (dandelion greens), chopped
3 tablespoons vegetable oil
Salt, pepper to taste
Parmesan cheese, grated (optional)
Directions
o Make chicken broth.
o Clean cicoria (dandelion greens) very well. Chop
o Fry chopped onion until golden.
o Add chopped tomatoes. Stir fry for a few minutes.
o Add chopped cicoria. Stir fry for a few more minutes.
o Add rice. Mix well.
o Add chicken broth to the onion, tomato, cicoria and rice mixture.
o Cook until the rice is ready.
o Garnish with Parmesan cheese (optional).
