Risotto con Cicoria (Rice with dandelions or dandelion greens)

Ingredients

1 cup rice
1 onion, chopped
1 tomato, chopped
3 tablespoons vegetable oil
about 4 cups fresh dandelion greens
1 teaspoon salt
1/8 teaspoon pepper
A large pot of water for cooking rice and dandelions



Directions

o Clean dandelion greens very well.

o Chop dandelion greens.

o Bring a large pot of water to boil.

o Add rice and dandelion greens to the water.

o Cook until rice is ready.

o Drain water.

o Meanwhile chop onion.

o Heat up oil in a frying pan.

o Fry chopped onion until golden.

o Add chopped tomato. Stir fry for a few minutes.

o Add cooked rice and dandelion greens to the onion and tomato mixture. Mix well.

o Cook for a few minutes. Season with salt and pepper.

o Serve as a side dish with sausage or some other meat dish.
