Directions

NOTA: Qualora il ripieno si presentasse troppo molle (bagnato) si potrebbe tentare di rimediare aggiungendo un poco di pane grattuguato e/o di formaggio. Non esagerare con troppo pane o troppo formaggio perch? ci? renderebbe, in cottura, un ripieno troppo duro e non gradevole. Tenere presente che le zucche che (dopo la cottura) si presentano con la polpa troppo acquosa, non sono adatte per il ripieno dei tortelli.

Confezionamento

Stendere la sfoglia, ottenuta con sole uova e farina, sul tagliere avendo l'avvertenza di non far seccare la parte che non si usa in quel momento coprendo parte della sfoglia;

Con un cucchiaio ed una forchetta posizionare una fila di piccole noci di ripieno distanti tra di loro quanto la largezza di un tortello;

Ripiegare la sfoglia e con le dita o con una forchetta quindi premere i lati dei tortelli per chiuderli in modo da sigillarli bene e da non lasciare aria al loro interno;

Separare tra di loro tortelli cos? ottenuti utilizzando una rotella dentata o un coltello; tagliare le eventuali "code" (pezzi di sfoglia senza ripieno tra un tortello e l'altro) troppo lunghe a misura secondo il proprio estro (estetico e di gusto); in alcune zone i tortelli con la coda sono una caratteristica peculiare e voluta;

Mettere i tortelli su un altro tagliere o su un vassoio badando ad infarinarli bene per non farli attaccare e procedere con un'altra fila fino alla fine della sfoglia o del ripieno.

NOTA:

Se rimane un po' di ripieno potr? essere utilizzato per condire una pasta asciutta corta, come le mezze penne o gobbetti, aggiungendo burro e altro formaggio. Se rimane un po' di sfoglia, dopo averla fatta asciugare una decina di minuti, si potranno ricavare quadrucci, maltagliati o tagliatelle.

Cottura

? cosa buona che tra la preparazione dei tortelli e la loro cottura non passi molto tempo (poche ore); in ogni caso ? possibile conservarli per un giorno o due in frigorifero con l'accortezza di infarinarli bene e osservare che non si attacchino tra di loro o al contenitore.

Preparere una pentola con abbondante acqua, salarla quando leva il bollore;

Calare i tortelli, pochi per volta, quando l'acqua bolle curando che il bollore non sia troppo forte, mescolare delicatamente, dopo poco, con un mestolo di legno;

Cuocere per alcuni minuti (da 6 a 10) in base al tempo intercorso dalla loro preparazione ed alla qualit? di uova e farina: meglio cuocerli "al dente", ma non troppo;

Prelevare delicatamente i tortelli cotti con un mestolo forato e, dopo averli ben scolati, riporli in una zuppiera condendoli a strati con burro e parmigiano grattugiato;

Proseguire con un'altra cottura (10-15 per volta) e cos? fino alla fine.

Condimento

La classica preparazione reggiana "impone" che i tortelli di zucca siano conditi soffregando un pezzo di burro su ogni strato degli stessi dopo averli cotti e posti nella zuppiera (o nel piatto se ? una preparazione singola) cospargendo poi di formaggio parmigiano-reggiano stravecchio.

Volendo, si possono condire anche con burro fuso, tenendo presente che risulteranno meno delicati e si dovr? utilizzare una maggiore quantit? di burro. Sempre il formaggio grattugiato, sopra.

Sconsigliabile l'utilizzo di burro nocciola o di burro aromatizzato con salvia.

Nella bassa mantovana ed in alcune zone della montagna reggiana si usa condirli anche con salse "rosse" a base di burro, cipolla e pomodoro o lardo e pomodoro.

Va segnalato che - sempre in alcune zone fuori della tradizione reggiana - nel ripieno viene messa della mostarda piccante di frutta al posto degli amaretti.

La tradizione resiste
