chicken alla cacciatora
Chicken alla Cacciatore (with pancetta, tomatoes and wine)

Ingredients

1 chicken
1 red onion
about 1/4 pound raw pancetta, cut into small bits
about 1/2 cup white wine
about 1 pound peeled tomatoes, chopped
Oregano, sage and rosemary to taste
Salt and pepper to taste



Directions

Cut the chicken into pieces.

Render fat of pancetta and fry onions until golden.

Add chicken and fry for about 10 minutes.

Add wine and peeled tomatoes.

Cook on low heat till ready.
