Potato and Meat Stew
Originated from: Abruzzo or Calabria

Ingredients

1 1/2 lbs good stewing beef
2 green peppers cut into strips
1 large onion
1 large can tomatoes
4 potatoes, cut in 1 inch cubes



Directions

Saute pepper, onion and meat in lard.

Remove, add tomatoes, salt and pepper. Cook 20 minutes.

Parboil potatoes 5 minutes.

Add meat and potato to tomatoes, cook until tender. If it gets too thick, add water.

(Good eaten by mashing the potatoes with a fork.)

The recipe in this entry was often made by Dorinda Cavanaugh's mother, Mrs. Ida Carosella.
