Squid with Onions/Calamaretti con Cipolle (with directions on how to clean squid)

Ingredients

1 pound squid
1/4 cup olive oil
3 onions, sliced
salt and pepper



Directions

TO CLEAN SQUID:

Remove heads and tentacles, empty sac, wash thoroughly.

Remove outer veiling by dousing in hot water, the veiling will pull off easily; rinse again in cold water.You now have a clean white fish.

The tentacles are also edible. To clean these, remove eyes, douse tentacles in hot water, pull off veiling and cups.

Was thoroughly and cut up.



Squid with Onions

Clean squid and cut into 1-inch lengths.

Cook onion and squid in hot olive oil, covered, until tender and onion is brown, approximately 20 minutes.

Season to taste and serve.

Serves 4.
