Squid with Tomatoes/Calamaretti con Pomidoro (using fresh tomatoes, red wine, parsley and basil)

Ingredients

3 pounds squid
6 tablespoons olive oil
1 tablespoons parsley, chopped
1 clove garlic
1 1/2 cups tomatoes, chopped
3/4 cup red wine
salt and pepper
1 tablespoons basil, chopped



Directions

Clean squid according to preceding directions, rinse many times.

Brown garlic in hot olive oil; add squid, cover and cook slowly for 10 minutes; add seasonings and wine, cook 5 minutes and add tomatoes, basil and parsley.

Cook until tender, about 20 minutes longer.

Serve hot.

Serves 6.
