Lobster Maria (with spaghetti, mushrooms, breadcrumbs and cheese sauce)

Ingredients

Lobster Maria
1 large lobster, boiled
salt and pepper
1/4 cup Parmesan cheese, grated
1 pound mushrooms, cooked
1/2 cup breadcrumbs

1/4 pound spaghetti, boiled

Cheese Sauce
4 tablespoons butter
1 cup milk
1/8 teaspoon pepper
4 tablespoons flour
1/4 teaspoon salt
1/2 cup Parmesan cheese, grated



Directions

Cheese sauce

Heat milk, and add blended butter and flour.

Stir constantly until thick.

Add cheese and seasonings; stir until well blended.



Boiled Lobster:

Half fill a large kettle with water, let it come to a rolling boil, add 1/4 cup salt, slowly slide in live lobster so as not to disturb boiling water, cover and boil rapidly 4 to 5 minutes.

Simmer 20 to 30 minutes, the time depending on size of lobster, then lift the lobster out and lay on its claws to drain.

With sharp knife or kitchen shears remove soft shell-like covering, crack claws to remove meat.

Mix breadcrumbs and cheese, place half in a buttered casserole.

Combine lobster, spaghetti, mushrooms and seasoning and pour over breadcrumb-cheese mixture, then top with remaining breadcrumb-cheese mixture.

Pour a cheese sauce over all and bake in a hot oven (400 degrees F) for 20 minutes.

Serves 4.
