Baked Eggs with Green Beans (Hard-boiled eggs, layered with flour, breadcrumbs, milk and Parmesan cheese)

Ingredients

2 cups green beans
4 tablespoons olive oil
6 tablespoons flour
1/2 cup breadcrumbs
1 teaspoon parsley, minced
6 eggs, hard-boiled
1 tablespoon onion, minced
3 cups milk
1/2 cup Parmesan cheese, grated
salt and pepper to taste



Directions

Cook onion in hot olive oil until it turns yellow; mix in flour, milk, and stir over a moderate heat until thick and smooth, add seasoning.

Butter a shallow dish, and arrange alternate layers of beans, eggs, and sauce, ending with a layer of sauce on top; sprinkle with a mixture of breadcrumbs and cheese.

Bake in a moderate oven (350 degrees F.) about 25 minutes, or until mixture bubbles.

Serves 6.
