Eggs Francesca/Uova alla Francesca (Scrambled eggs, with green pepper, tomatoes, canned mushroom caps and capers)

Ingredients

2 tablespoons olive oil
2 tablespoons green pepper, chopped
1 cup tomatoes, strained
8 eggs, beaten
2 tablespoons onion, chopped
1 can mushroom caps
2 tablespoons capers



Directions

Simmer onions and green pepper in hot olive oil until soft.

Add mushrooms, capers and tomatoes; heat through, and stir in eggs, scrambling well.

Serve on toast.

Serves 4.
