Cheese Croutons (using home-made bread crumbs, Parmesan cheese and parsley)

Ingredients

3 eggs
1 cup grated Parmesan cheese
1 cup home-made bread crumbs (more if needed)
1/4 cup parsley, chopped finely
1 teaspoon baking powder
salt, pepper



Directions

Mix ingredients.

Pour thick batter into greased casserole dish.

Bake in a 350 degree oven until the crust is golden brown (about 20 minutes).

Cool. Cut up and serve.


Notes

In Italy these cheese croutons were either served with broth, or on their own as a non-sugary snack. A similar recipe which was served only with soups was made by combining the above ingredients and then cooking it in the broth in which was going to be served. The batter was rolled up in a ball and wrapped in material and then suspended in the broth. Photo: Mary Melfi.
