Directions In this world one should respect everyone, this is general advice....
Notes The recipe in this entry was taken from "La Scienza in Cucina e L'Arte di Mangiar Bene manuale Pratico per le Famiglie" compilato da Pellegrino Artusi. The book was first published in 1891. Since then many Italian editions have been published. Olga Ragusa's selection of recipes from Pellegrino Artusi's famous cookbook, titled "The Italian Cook Book," can be found in its entirety at www.archive.org (It's free). The University of Toronto recently published a new English edition of Pellegrino Artusi's "Science in the Kitchen and the Art of Eating Well"; many of the recipes in this edition can be found at www.books.google.ca.... The following notes on "ciccioli" are from the Italian Wikipedia, using machine Google translation: Greaves are a food product obtained by processing of the fat inside of the pork in the preparation of lard. The fat, separated from the rind and made into cubes, put it to simmer and constantly, until boiling, for not less than three hours in cauldrons of copper or steel, so as to melt the fat and allow evaporation of the water contained. When pieces of fat bought a golden color are paid out in a towel, squeezed and finally added flavorings, cloves, cinnamon, bay leaves, pepper, nutmeg and salt in varying doses depending on the butcher. The casting is part of the lard , the remaining solid part are the greaves. Wringing can occur in Torchietti wood or steel or between axes hinged to one side, and after the pressing greaves may be left in tile or crumbled hot. Are preserved safely up to three or four months. Greaves are a high-calorie food that, in the country tradition, was a great meal, in union with the polenta. Now we are mainly used to accompany aperitifs and appetizers. Crumbled make the most delicious cakes, bread and polenta, particularly in Irpinia is made a loaf of bread dough contains precisely greaves, also called eg pizza king frittole. Greaves, spread throughout Italy, in some areas are called by names in Bresciano; grasooli in Modenese; sfrizzoli in the center They are called cìguele in Molise. In Friuli are called cicines or Fricis. In Vercelli and Pavese Graton and brands are called slaked or sgrisci. Greaves Neapolitan A Naples is a very common version of greaves in which the pork, pressed, with abundant remains soft parts of lean meat. These greaves are sold sliced into thick not too thin, and are typically used as a relish. Typical is the combined greaves and cottage cheese with pepper.... Vengono chiamate cìguele in Molise. In Friuli vengono chiamati cicines o fricis. P.S. I made an attempt to do this recipe, but I didn't follow the recipe to the letter. I simplified it and the result was a rather uninteresting yeast bread. As the amount of sugar used is rather small, it certainly didn't taste like a cake or a tart, but then again, I didn't follow the recipe religiously, so I can't say I know what it is supposed to really taste like.
