Ingredients

For about 7-9 cups of dough:
500 g (about 1 pound) white flour, type 00
25 g (about 4/5 of an ounce) of fresh yeast
400 g (about 14 ounces) of water, OR a mixture of water and white wine -- 300 g (about 10 1/2 ounces) of water and 100 g (about 3 1/2 ounces) of white wine
5 g (about 1/5 of an ounce) salt
about 1/2 cup virgin olive oil

Topping
10 g (about 1/3 of an ounce) salt
1/2 kg (about about 1 pound) white onions or red, to taste, sliced

Directions

The preparation of focaccia with onions is the same as the classic focaccia. That is: Place the yeast in a glass of water. After it has dissolved add a pound of flour, a teaspoon of salt and half a cup of olive oil.

Let the dough rise in the pan for another 5-6 hours at room temperature.

Pierce the surface of the dough with a knife and insert into each hole a few grains of salt.

Add the sliced onions on the top of the foccacia.

Preheat the oven to maximum temperature that can reach and bake for fifteen to twenty minutes.



Tips

Instead of water, you can add 3/4 water and 1/4 of white wine, so the final taste better, but we should not overdo it, otherwise the cake will taste the wine.

La preparazione della focaccia con cipolle stessa della la focaccia classica. Ovvero:

In una ciotola di vetro o d'acciaio, mettere l'acqua e il lievito.

Aspettare che si sciolga e poi aggiungere un etto di farina, un cucchiaino di sale fino e mezzo bicchiere di olio.

Mescolare bene fino a quando il sale non si scioglie e la farina non ben amalgamata.

Lasciare riposare la pastella ottenuta un'ora o due; non di piu altrimenti prende sapore di lievito. In questo modo si ottiene la madre, che fa lievitare meglio il resto della farina che si aggiunger.

Dopo un'ora o due (dipende dalla temperatura ambiente, se fa freddo ci vuole pi tempo), quando la madre ha prodotto delle bollicine, aggiungere la farina. Di solito questa operazione si fa a occhio e si aggiunge tanta farina quanta ne basta per fare un impasto che non si attacchi alle mani. Bisogna raggiungere questo risultato a poco a poco, in modo da non eccedere di farina, altrimenti non viene abbastanza soffice.

Fare una sfoglia fin da subito la pi sottile possibile. Se rimane umida infarinare bene, passare al mattarello o alla macchina col rullo e stendere in una teglia da forno.

Lasciare lievitare per circa 5-6 ore a temperatura ambiente.

Bucare la superficie della pasta con un coltello e inserire in ogni buco qualche grano di sale grosso.

Scaldare il forno alla temperatura massima che riesce a raggiungere e infornare dai quindici ai venti minuti. Le cipolle non vanno cotte, altrimenti bruciano; una volta tagliate a fette si pongono in una terrina, si oliano a sufficienza e si salano abbastanza.

Al posto dell'acqua si pu? aggiungere 3/4 acqua e 1/4 di vino bianco, cos? il sapore finale migliora; non bisogna tuttavia esagerare, altrimenti la focaccia prender il sapore del vino.



Per quando riguarda la lievitazione:
