Ingredients

Any taralli or tarallini [sugarless] dough of one's choice

Egg wash
2 egg yolks
2 tablespoons cream
2 tablespoons grated Parmesan Reggiano cheese

Directions

o Make a taralli or tarallini unsweetened dough (As the Parmesan cheese adds significant flavoring to the taralli or tarallini, it's not necessary to include other flavorings such as fennel seeds or anise seeds, though a touch of pepper would be fine).

o Mix egg yolks, cream and grated Parmesan cheese.

o After placing the taralli or tarallini on a baking sheet lined with parchment paper, brush the tops with the egg-cream-and-Parmesan cheese mixture.

o Bake at 400 degrees F until the taralli or tarallini are golden brown (about 20 minutes).

Notes

Italian bread sticks and calazone are often brushed with a mixture of egg, cream and Parmesan cheese. The mixture also works quite well with taralli or tarallini..... Image on plate, by Cesare Marchesini, 1939.
