Ricotta, Roasted Almonds and Chocolate Pastry Filling

Ingredients

1 container of ricotta (about 450 g)
1/2 cup sugar
1/4 cup cocoa powder
1/2 cup coarsely ground roasted almonds
1/2 teaspoon vanilla extract



Directions

Combine cocoa powder and sugar.

Using an electric mixer or blender combine the ricotta with the cocoa powder mixed with sugar and the vanilla.

Fold in the coarsely ground roasted almonds with a rubber spatula.

Use as a filling for cream puffs, cup cakes or any other kind of pastry.




Notes

This is just one of hundreds of variations on this recipe. One can add lemon and/or orange zest. Some cooks add almond extract and so on.... Photo: by the contributor.
