Ingredients

For Italian chocolate-flavored custard (or pastry cream)*

1/2 cup sugar
1/4 cup cocoa powder

2 1/2 cups scalded (whole) milk
2 to 3 tablespoons flour

Directions

Mix egg yolks, sugar and vanilla.

Slowly add hot milk, beating constantly.

Add flour, beating constantly.

Place mixture in a sauce pan and cook over low heat until it boils and then thickens, all the while stirring it (and making sure it does not burn). When it has the look of a custard or thick cream, it's ready (Takes anywhere from 6 to 10 minutes).

Cool.

Notes

Most custards are made with double boilers, but they are more complicated to do. This is an easier version. For the traditional version check out the recipe entitled "Traditional Italian Chocolate Custard" submitted by Olga Palazzo.... Photo: Mary Melfi.
