Ingredients

For 6 people
6 egg yolks
100 g (about 3 1/2 ounces) of sugar
40 g (about 1 1/2 ounces) flour type "00"
1/2 liter (1/2 quart) of milk

Directions

In a non-stick saucepan place the egg yolks and sugar, and mix well together.

Variants

There are many variations to the basic cream, here we see some of them:

Delicate cream

The base of it may not be very popular because the egg yolk gives it a strong flavor. This flavor may be tempered by mounting the egg whites, kept separately, adding them to the cream until stiff and warm, stirring well. This procedure will also change the color of the cream to make it lighter, and more clear.



Vanilla cream

Ideal for a good preparation is to get a vanilla bean (the best is that of Madagascar) cut in half lengthwise and drop the seeds into the milk before putting it on the fire and put the two sections of the milk carton same to boil. When you pick up the milk from the heat, remove the two half sticks of vanilla before pouring in the mixture. An alternative is to get a bag of 0.5 grams of vanilla flavoring, to be dissolved in milk, but the aroma of natural vanilla is still unique.



Lemon cream

To give a flavor of lemon, you need to get a medium-sized lemon, which has not undergone any treatment on the skin, so free from pesticides, lacquers, polishes and preservatives. You will then grate the rind of the lemon, taking care not to damage the white part but using only the yellow part, along with sugar and egg yolks.



Diplomatic cream

This variant is very heavy in terms of calories and fat, but very delicate in flavor. It is to add a quarter of a liter of whipped cream cooled to room temperature, mixing thoroughly. Even in this case, the color of the cream will be lighter.



Cocoa cream

Only involves the replacement of half the weight in flour with just cocoa powder. You can also completely replace the flour with the cocoa, but be careful because cocoa is bitter in nature, to put too much could upset the balance of flavors and make the cream too different from the base to still be considered "custard."



Utilitarian

The custard, in its versions "basic", "delicate", "vanilla" and "lemon", is the perfect complement to all the preparations that include pastry, both as a filling for garnish. Versions "diplomatic" and "chocolate" are better suited to act as a filling for sponge cake, in all its forms, or toppings of cakes made with the pastry bag.

The cream can be eaten alone, or in combination with fresh fruit cut into pieces. Another example of this is combined with the fruit: the fruit in boiling water for a few minutes, with cloves, nutmeg, cinnamon, and then drain the fruit, add it to the cream, garnish with mint and almonds.



Preparazione (Original Italian text)

In una casseruola antiaderente, mettete i tuorli d'uovo gi divisi dagli albumi, lo zucchero e amalgamate il tutto. Quando avrete un impasto omogeneo, aggiungete la farina e amalgamate ancora bene il tutto.

A parte mettete il latte in un pentolino sul fuoco e portatelo a ebollizione, togliete il latte, abbassate il fornello al minimo e mettete sul fuoco la casseruola con l'amalgama precedente, iniziate a mescolare lentamente col cucchiaio di legno e versate piano piano il latte, fino ad ottenere una crema densa come una maionese e senza grumi.

A questo punto, lasciate prima raffreddare la crema a temperatura ambiente, mescolandola ogni tanto per evitare che i grassi del latte formino la classica pellicina superficiale, poi mettete in frigorifero per un paio d'ore prima di usarla come dolce al cucchiaio o per farciture.



Varianti

Esistono molte varianti alla crema base, di seguito ne vediamo alcune:

Crema delicata

La preparazione base pu non essere molto gradita perche il tuorlo d'uovo le conferisce un sapore forte e deciso. Questo sapore pu essere stemperato montando gli albumi, conservati a parte, a neve e aggiungendoli alla crema tiepida, mescolando bene. Questa procedura cambier anche il colore cella crema rendendolo pi chiaro.

Crema alla vaniglia

L'ideale per una buona preparazione alla vaniglia procurarsi una stecca di vaniglia (la migliore quella del Madagascar) tagliarla in due per lungo, far cadere i semini dentro al latte prima di metterlo sul fuoco e mettere le due sezioni della stecca nel latte stesso a bollire. Quando ritirate il latte dal fuoco, eliminate le due mezze stecche di vaniglia prima di versarlo nell'amalgama principale.

Una alternativa procurarsi una bustina da 0,5 grammi di aroma di vaniglia, da sciogliere nel latte, ma l'aroma della stecca di vaniglia naturale comunque unico.

Crema al limone

Per conferire un aroma di limone, bisogna procurarsi un limone di medie dimensioni, che non abbia subito trattamenti sulla buccia, quindi esente da pesticidi, lacche, lucidi e conservanti. Si dovre quindi grattugiare la buccia del limone, avendo cura di non intaccare la parte bianca ma utilizzando soltanto la parte gialla, insieme a zucchero e tuorli d'uovo.



Crema diplomatica

Questa variante decisamente pesante quanto a calorie e grassi, ma estremamente delicata nel sapore. Si tratta di aggiungere un quarto di litro di panna montata alla crema raffreddata a temperatura ambiente, amalgamando bene il tutto. Anche in questo caso, il colore della crema risultere pi chiaro.



Crema al cacao

Variante per ultragolosi, comporta unicamente la sostituzione di mete del peso in farina con altrettanto cacao magro in polvere. Possibile anche sostituire integralmente la farina con il cacao, ma fate attenzione perche il cacao di natura amaro, metterne troppo potrebbe stravolgere l'equilibrio dei sapori e rendere la crema troppo diversa dalla base per essere considerata ancora "crema pasticcera"



Utilizzo

La crema pasticcera, nelle sue versioni "base", "delicata", "alla vaniglia" ed "al limone", il perfetto complemento di tutte le preparazioni che comprendono la pasta frolla, sia come ripieno che per guarnitura. Le versioni "diplomatica" ed "al cacao" sono pi adatte a fare da farcitura per pan di spagna, in tutte le sue forme, o per guarniture di torte realizzate con la sacca da pasticciere.

La crema pu essere consumata anche da sola, oppure abbinata alla frutta fresca tagliata a pezzi. Un altro esempio di abbinamento con la frutta questo: bollire la frutta in acqua, per pochissimi minuti, con chiodi di garofano, noce moscata, cannella; quindi scolare la frutta, unirla alla crema pasticcera, guarnire con menta e mandorle.
