Ingredients

1 pound of fruits in season
currants
strawberries
raspberries
cherries
raisins
apricots
1 peach
1 pear
3 1/2 ounces of sugar
juice of 1lemon



Directions

Take various fruits in season, ripe and of good quality: currants, strawberries, raspberries, cherries, raisins, apricots, 1 peach, 1 pear.

Start with the cherries and peel the fruits, cut them into small slices, and throw away the cores and stones. Use very little currants, because of their large seeds.

If the fruit prepared in this way weights about 1 pound, spray 3 1/2 ounces of sugar on it and the juice of 1 lemon.

Mix and let rest for half an hour.

Place a sheet of apper in the bottom of an ice-cream mould, fill it with the fruit, pressing somewhat; close the mould and put it in ice and salt for at least an hour and a half.

When it is removed from the mould it should appear like a piece of marble of ice-cream.

This recipe is sufficient for 4 or 5 persons.
