Crema Pasticcera (Traditional Italian Chocolate Pastry Cream)

Ingredients

3 egg yolks
13 oz. milk
3 teaspoons flour
5 teaspoons sugar
Zest of half a lemon

1/8 cup cocoa powder



Directions

Combine the first five ingredients and beat until well mixed. Cook in a double boiler until thick and creamy. Add cocoa powder. Mix well. Cool.


Notes

This is a traditional recipe for Molise-style chocolate custard that is most often used to fill in the layers of "Pane di Spagna" or topped on "Zuppa Inglese."
