Ingredients
8 oz frozen raspberries, thawed
8 oz Mascarpone cheese
4 tbsp heavy cream
1-2 packages of Equal (or other aspartame) OR 1-2 teaspoons sugar
2 x 1/4 cup of Marsala
4 Amaretto cookies per serving
Directions
1. Mix Mascarpone, 1/4 cup Marsala, the cream and 1-2 little packages of Equal in a bowl. Stir it well with a whisk.
2. In another bowl combine the thawed raspberries with the other 1/4 cup of Marsala, add Equal to taste*
3. Cover both bowels with Saranwrap and refrigerate fro 1/2 to 1 hour.
4. Crumble two cookies per serving in wine glasses. Add raspberries with their juices. Add Mascarpone mixture and another two crumbled cookies to each serving.
5. Put everything back in the fridge for some 1/2 hour.
* = Sugar substitutes (aspartame) vary in strength: President's Choice is sweeter than Equal, which is my favorite. Be careful with this as the Marsala is pretty sweet in itself. Enjoy.
