Ingredients

First variant
1 liter (about 1 quart) milk
200 grams (7 ounces) rice
300 grams (10 1/2 ounces) sugar
6 eggs
150 grams (about 5 1/4 ounces) candied cedar or citrus
100 grams (3 1/2 ounces) amaretti cookies
150 grams (about 5 1/4 ounces) lemon zest
1 cup almond liqueur for cakes

Second variant

80/100 grammi di riso (scegliete una qualit? dal grano minuscolo - tipo il vialone nano - originario)
100 gr di mandorle
100 gr di canditi tagliati a dadini o tritati grossolanamente (esclusivamente cedro ed arancia)
100 gr di zucchero
80 gr zucchero vanigliato
1 limone (scorza)
4 o 5 amaretti (in realt? servirebbero alcune mandorle amare ma oggi sono introvabili)
due o tre cucchiai da cucina di un liquore per pasticceria (l'ideale l'amaretto o mandorla amara, se non avete ripiegate su un altro liquore)

Ingredienti
Per 2 persone:
200 g di riso
160 g di zucchero
100 g di burro
4 tuorli d'uovo
1 litro abbondante di latte
uvetta q.b.
cocco grattugiato q.b.




Directions

First variant

Preparation

Boil the milk with 3/4 of the sugar and grated lemon zest, cooking the rice in the milk, al dente and add the remaining sugar having first been caramelized (put it in a saucepan on the fire and burn until all are dissolved and will take on dark color) then cool everything.

Meanwhile, beat the eggs, finely chop almonds, candied cedar (or citrus), add crumbled macaroons in the rice and mix well.

Butter a baking pan, sprinkle bread crumbs on the buttered baking pan, pour the mixture in the pan and bake in a preheated oven 180 C for 45 min.

When the cake is cool, pierce the entire surface with toothpicks and wet it thoroughly with the liquor.

Let stand for 4-5 hours.



Tips

Place on a serving plate, cut into small diamonds, put a toothpick on them. Serve cold.



Second variant

The cake is made with rice, eggs, almonds, milk, candied cedar or citrus and macaroons.

Preparation

Boil the milk with the zest of a lemon, pour the rice and let cook 20 minutes, add the sugar and let cool. Now add the eggs one at a time.

Lightly roast the almonds in the oven and chop coarsely.

At this point add all the other ingredients (amaretti cookies must be crumbled).

Mix well and pour the mixture into a greased baking sheet or lined with parchment paper.

Put in the oven at 140 C for about 3 hours: it is good that the baking is slow so as not to detach the surface of the cake from the underside. Time is not easily quantifiable because moisture of the compound. In any case, any proof of cooking are two: 1) the crust should be well browned (Do not burn), 2) or until toothpick inserted into the cake should come out dry.

At this point, remove the cake from the oven, allow to cool and cut into lozenges of 3 to 4 cm. of side.

Serve stabbing each diamond with a toothpick.



non-Bolognese Recipe

Preparation

Cook the rice in boiling water 5 minutes.

Boil the milk, sugar and butter together.

Drain the rice and finish cooking in the milk for 10 minutes.

Add the 4 egg yolks, raisins and grated coconut.

Pour the mixture in a shallow roasting pan lined with parchment paper.

Bake for 20 minutes in the oven at 180 C.

Preparazione

Fare bollire il latte con 3/4 zucchero e scorza limone cuocere il riso nel latte, al dente e aggiungere il rimanente zucchero avendolo prima caramellato (metterlo in un pentolino e bruciarlo sul fuoco fin quando risulter tutto sciolto ed assumer colorazione scura) fare raffreddare il tutto, nel frattempo sbattere le uova, tritare finemente mandorle, cedro, e sbriciolare amaretti aggiungere il tutto nel riso e mescolare accuratamente. imburrare una teglia mettere pangrattato scrollandone la parte in esubero versare l'impasto e passare in forno preriscaldato 180 C per 45 min. quando la torta raffreddata, bucare tutta la superficie con stuzzicadenti e bagnarla abbondantemente con il liquore per dolci. lasciare riposare per 4-5 ore.

Consigli

Sformarla sul piatto di portata, tagliarla a piccoli rombi e su ciascuno di essi porre uno stuzzicadenti. Servire fredda.



Seconda variante

La torta si prepara con riso, uova, mandorle, latte, canditi e amaretti.

Preparazione

Fate bollire il latte con la scorza di un limone, versateci il riso e lasciate che cuocia 20 minuti,unite lo zucchero e fate raffreddare. Ora unite le uova una alla volta.

Tostate leggermente la mandorle in forno e frantumatele grossolanamente.

A questo punto unite tutti gli altri ingredienti (gli amaretti devono essere sbriciolati). Mescolate bene e versate il composto in una teglia imburrata o foderata di carta forno.

Mettete al forno a 140 C per circa 3 ore: la cottura bene che sia lenta per non far staccare la superficie del dolce dalla parte sottostante. Il tempo non facilmente quantificabile per via dell'umidit del composto. In ogni modo le prove dell'avvenuta cottura sono due: 1) la crosta deve essere ben brunita (mi raccomando non bruciata); 2) infilando uno stecchino nella torta deve uscirne asciutto.

A questo punto estraete la torta dal forno, lasciatela raffreddare e tagliatela a losanghe di 3 - 4 cm. di lato. Si serve infilzando ciascuna losanga con uno stuzzicadenti.



Ricetta non bolognese

Preparazione

Cuocere il riso in acqua bollente 5 minuti.

Far bollire il latte, assieme a zucchero e burro

Scolare il riso e terminarne la cottura nel latte per 10 minuti.

Aggiungere i 4 rossi d'uovo, l'uvetta e il cocco grattugiato.

Depositare l'impasto in una teglia bassa preventivamente ricoperta di carta da forno.

Cuocere per 20 minuti circa in forno a 180 C.
