Pignolata (Pine nut clusters)

Ingredients

For cookie dough
1 egg
1 cup flour
1 tablespoon sugar
1/4 teaspoon Magic baking powder

For honey mixture
1/4 cup honey
1/4 cup table sugar

For deep frying
about 1 cup vegetable oil

For decoration
about 2 tablespoons pine nuts, lightly roasted
about 2 tablespoons multi-colored sprinkles




Directions

o Mix flour, sugar, Magic baking powder and egg and work into a dough.

o Shape the dough into a ball.

o Let the dough rest in the fridge for about 1/2 hour.

o Roll dough out to about 1/4 inch thick. Cut small squares about 1 inch by 1 inch.

o Deep fry squares of dough till golden.

o Meanwhile heat sugar and honey together.

o Dip the fried dough squares in the sugar and honey mixture.

o Sprinkle with lightly roasted pine nuts.

o Sprinkle with multi-colored sprinkles.

o Place the pine nut clusters on a greased platter (or one lined with parchment paper).

o Keep in fridge until needed.
