Almond Nougats (with honey and orange juice)

Ingredients

3 tablespoons freshly-squeezed orange juice, strained
2/3 cup table sugar
1/2 cup honey
2 1/8 cups, lightly roasted almonds, chopped





Directions

o Put the orange juice, sugar and honey in a pan and cook On moderate heat until the sugar dissolves (about 2 or 3 minutes).

o Add the almonds to the pan and mix very well, until the nuts are well-coated and a thick syrup is formed (about 4 minutes).

o Pour the mixture on a greased cookie sheet (or one lined with parchment paper) and flatten it out so that is about 1/4 of an inch thick.

o Place in the fridge overnight.

o Cut the almond nougat into pieces and serve.
