Prune Jam
Originated from: Casacalenda, Molise, Italy

Ingredients

5 pounds pitted prunes
1 pound sugar



Directions

o Remove pits from prunes.

o Add sugar.

o Place the mixture in a container and cook over low heat for a few hours.

o When the mixture has the right jam-like consistency, place it in glass Mason jars.

o Store in a cold room until needed.




Notes

Mrs. Rosina Melfi notes that prior to World War II prune jam was very popular in Molise as this fruit grew easily in the area. Of course, wine grape marmalade was even more popular than prune jam as almost everyone in town had a vineyard, but not everyone had a prune tree.... Photo: Wikipedia.
