Panettone
Panettone (Easter bread, without yeast, with baking powder and lemon zest)

Ingredients

8 eggs, separated
1 cup of sugar
2 cups of flour
Zest of 1 lemon
a pinch of salt
2 oz. of oil
2 oz. of water
3 teaspoons of Magic baking powder



Directions

Beat egg whites till stiff, keep aside.

Beat egg yolks.

Beat egg yolks with sugar till creamy.

Add the remaining ingredients (baking powder at the end), beating all the time.

Fold in the egg whites.

Bake in a 300 degree F oven for about an hour or so.


Notes

The photo was taken by Mary Melfi who tried this recipe and found it easy to do. It tastes very good, but it does not taste like anything store-bought. It comes closer to a pound cake than to a holiday bread.
