Directions
Start by weighing the rice and flour; use the same amount of each.
Cook the rice, then cool it.
When the rice is cooled down, mix it with the flour, and yeast (proofed in warm water). The resulting dough should be soft.
Place the dough in a container, allow it to rest, and increase in volume for a few hours.
Take a piece of dough the size of one's finger and fry it in plenty of oil.
Once golden remove and drain of excess oil.
Cool.
When ready to serve, drizzle the fritters with [warm] honey.
Sprinkle some finely grated orange zest and icing sugar.

Si inizia con l'approntare uguale quantite, in peso, di riso e di farina. Si mette a cuocere il riso in abbondante acqua (una variante lo vuole cotto nel latte come le zeppole) e dopo averlo scolato lo si lascia raffreddare.
Una volta freddo lo si mescola alla farina e si aggiunge il lievito.
Si lascia lievitare qualche ora e quando il composto si presenta soffice con una paletta per dolci e una spatola stretta si preparano dei bastoncini della dimensione di un dito e li si friggono in abbondante olio bollente.
Una volta dorati si tolgono dall'olio e dopo averli sgocciolati si lasciano raffreddare.
Vengono poi serviti freddi cosparsi di miele, aromatizzato con le bucce di arancia fresca grattugiate, diluito in acqua, e spolverati con zucchero al velo vanigliato.
