Ingredients

For pastry crust
4 Eggs
a glass of extra virgin olive oil
a glass of milk
600 grams (about 1 1/3 pounds) of flour "00"
a sachet of yeast typically used for sweets
4 tablespoons sugar

For pastry filling

for savory fiadone: 800 grams (about 1 3/4 pounds) of cheese semifresco (sheep and cow)

for sweet fiadone: 700 grams (about 1 1/2 pounds) ricotta cheese

7 eggs
2 packets of yeast
Pepper (to taste)
Nutmeg (to taste)
Salt (to taste) but for sweet fiadone, don't add salt, add 500 grams (about 16 ounces) sugar

Egg wash
1 beaten egg

Pasta

Disporre la farina a fontana sul tavolo da cucina, al centro mettere le uova, l'olio e il latte in cui e stato sciolto il lievito (per fiadoni dolci aggiungere lo zucchero, per quelli salati il sale.). Impastare energicamente per ottenere un impasto omogeneo, spinare l'impasto con il mattarello fino a raggiungere uno spessore di 3-4-mm. Foderare con la pasta un tortiera gia oliata avendo l'accortezza di lasciare un bordo di circa 5cm che servira, una volta versato il ripieno nello stampo, per ricoprire i bordi del fiadone. La pasta, precedentemente lasciata da parte, viene lavorata e tagliata a striscioline che verranno disposte a rombo o a croce sulla superficie del fiadone.



Farcitura:

Il formaggio vaccino o pecorino, di produzione locale, da utilizzare per l'impasto del fiadone si ottiene riponendo la cagliata in canestrini di giunco e poi lasciato ad asciugare per circa 10 gg. In una terrina mettere il formaggio grattugiato (o la ricotta di pecora asciutta nei fiadoni dolci), le uova sbattute (per il tipo dolce aggiungere lo zucchero), le due bustine di lievito, il pepe e la noce moscata. Lavorare l'impasto gli ingredienti con un cucciaio di legno in modo da ottenere un impasto cremoso ed omogeneo e versarlo nella tortiera rivestita in precedenza. A parte, battere un uovo che servira per spennellare la superficie del dolce che consentira allo stesso di assumere quel colore particolare. Mettere in forno gia calda a 180 - 200, protrarre la cottura per circa tre quarti d'ora, fin quando il fiadone risultera ben gonfio e colorito.
