2 cups all purpose flour
1/4 cup butter, melted (then cooled)
3/4 cup sugar
1 teaspoon baking powder
2 large eggs
Grated zest of 1 small lemon

Preheat the oven to 375 degrees F.

Sift together the flour, sugar, baking powder in a mixing bowl.

Add lemon zest and mix well. Keep aside.

Using an electric beater, beat eggs.

Add butter and mix well.

Add dry ingredients to the egg mixture and work into a soft dough.

Form the dough into a log (If it is sticky, dust it with flour).

Cut the unbaked log into slices and place the slices on a baking sheet lined with parchment paper.

Bake until golden -- about 18 to 26 minutes.
