Ingredients

8 egg whites, beaten stiff
8 egg yolks
2 pounds of fine sugar
1 pound of starch ["fioretto ovvero amido"]

Topping
Sugar

Paper cups or cookie molds

otto chiara d'ovi, che batterai alla fiocca
otto rossi, quindi batterai
due libbre di zucchero finissima
una libra di fioretto ovvero amido






Directions

Take eight egg whites, beat them till stiff, then beat egg yolks with fine sugar till cream, then add the startch.

Place the mixture in well-greased cookie forms, sprinkle with sugar.

Cook for about half an hour in the oven, when they are the right color take out, and cool.

Remove from the forms, and serve.

Prendi otto chiara d'ovi, che batterai alla fiocca e quindi batterai i rossi, che li unirai alla fiocca, ci mescolerai ancora due libbre di zucchero finissima; quindi leggermente ci porrai una libra di fioretto ovvero amido, che ancor benismo rivolgerai.

Fatta questa compoiizione, la porrai nelle formette, o di latta, o di carta bene uta di butiro, e sopra ci farai una polverizzata di zucchero, per questo formette ti regolerai come il pane di sppagna, col non empirle tutte; li farai cuocere per una mezza ora al forno, e quando saranno coloriti, e quasi raffreddati li sformerai.
