Savoiardi (Ladyfingers, without shortening, flavored with vanilla and lemon zest)

Ingredients

Savoiardi (Makes about 32 cookies)

4 extra large eggs, separated
1 cup sugar
2 cups flour
1 teaspoon vanilla
1/4 teaspoon salt
2 teaspoons baking powder
Finely grated zest of 1 small lemon

For dusting
about 1/4 cup icing sugar



Directions

o Preheat oven to 350 F degrees.

o Beat egg whites till stiff.

o Cream sugar with egg yolks. Add vanilla.

o Mix flour, baking powder and salt together.

o Add the flour mixture to the creamed egg yolk.

o Add grated lemon zest.

o Fold in beaten egg whites.

o Line 2 cookie sheets with parchment paper.

o Pipe 3 inch long finger shapes, leaving ample space between the cookies as they will spread.(Alternatively one can drop about a tablespoon of batter on the cookie sheet, shaping the batter into an oblong shape).

o Dust cookies with icing sugar.

o Bake until golden brown (about 12 minutes).
