Savoiardi (Ladyfingers, without shortening, flavored with almond extract)

Ingredients

Savoiardi (makes about 32 cookies)
2 cups flour
1 cup sugar
4 extra large eggs
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons almond extract

Topping
about 1/4 cup icing sugar



Directions

o Beat eggs and sugar until creamy (about 8 minutes).

o Mix flour with salt. Add baking powder and mix well.

o Slowly fold in the flour mixture to the creamed egg and sugar mixture.

o Line 2 cookie sheets with parchment paper.

o Pipe 3 inch long finger shapes, leaving ample space between the cookies as they will spread (Alternatively one can drop about a tablespoon of batter on the cookie sheet, shaping the batter into an oblong shape).

o Dust icing sugar on cookies.

o Bake until golden brown (about 12 minutes).
