Ingredients

First Recipe
200 grams (about 7 ounces) flour
100 grams (about 3 1/2 ounces) sugar
100 grams (about 3 1/2 ounces) sweet almonds, blanched and coarsely ground
30 grams (about 1 ounce) butter
1 egg
a touch of lemon zest, or cinnamon, or orange-flower water
Rosolio or brandy (as much as is needed)

Egg wash
Egg yolk

Second recipe
200 grams (about 7 ounces) sweet almonds, blanched and coarsely ground
100 grams (about 3 1/2 ounces) flour
100 grams (about 3 1/2 ounces) sugar
30 grams (about 1 ounce) butter
1 egg
a touch of lemon zest, or cinnamon or orange-flower water
rosolio or brandy (as much as is needed)

Egg wash
Egg yolk, beaten

Third recipe
200 grams (about 7 ounces) sweet almonds, lightly roasted, finely ground
200 grams (about 7 ounces) icing sugar
2 egg whites
lemon zest or other flavoring

Directions

There are several ways to make this sweet. Here are three different recipes; the first two are more for domestic use; the third is more refined.



For the first two recipes, blanch the almonds and then grind them coarsely with the sugar until they are half as big as a grain of rice.

Mix the almonds with the other ingredients and work into a soft dough, using as much as rosolio or brandy.

Shape the dough into large fava beans, you should get about 60 or 70.

Place the cookies in a greased cookie sheet dusted with flour.

Brush the tops of the cookies with egg yolk.

Bake in a Dutch oven.

Because the cookies are small, they will bake very quickly.



For the third recipe, dry the almonds in the sun or on the fire, and then grind them very fine in a mortar, add the egg whites a little at a time.

Lastly, add the sugar, and mix together.

Place the dough on a floured wooden board.

Form into a long roll and cut into forty or more pieces.

Shape like fava beans.

Place on greased and floured cookie sheets.

Brush with egg yolk.

Bake.

Varie sono le maniere di fare le fave dolci, v'indiglia, la terza e piu fine.



Per le due prime sbucciate le mandorle e pestatele collo zucchero alla grossezza di mezzo chicco di roso. Mettetele in mezzo alla farina insieme cogli altri ingredienti e formatene una pasta alquanto morbida con quel tanto di rosolio o d'acquavitite che occorre. Poi riducetela a piccole pastine, in forma di una grossa fava, che risulteranno in numbero di 60 o 70 per ogni ricetta. disponetele in una teglia di rame unta prima col lardo o col burro e spolverizzata di farina; doratele coll uovo. Cuocetele al forno o al forno da campagna, osservando che, essendo piccole, cuociono presto. Per la terza seccate le mandorle al sole o al fuoco e pestatele fini nel mortaio con le chiare d uovo versate a poco per volta. Aggiungete per ultimo lo zucchero e mescoladno con una mano impastatele. Dopo versate la pasta sulla spianatoia sopra a un velo sottilissimo di farina per foggiarlo a guisa di un bastone rotondo, che dividerete in 40 parti o piu per dar loro la forma di fave che cuocerete come le antecedenti.


Notes

Pellegrino Artusi notes in his introduction to this recipe that "These sweets are generally made for the Day of the Dead, and they replace the garden-variety fava beans which are cooked with ham bone for this feast day. This custom must have started in antiquity, since the fava beans were used as an offering to the Fates, Pluto and Persephone. The ancient Egyptians did not eat fava beans, they did not cultivate them, nor did they touch them with their hands. Their priests won't even look upon them, considering them vile. Fava beans, especially black ones, were used as a funeral offering because it was believed that they contained the souls of the dead. During the ancient feasts of the Lemures, people would spit out the black fava beans while beating a copper pot, to chase out of their houses the spirits of their ancestors and the souls of the departed. Festus claimed that there was a funereal sign on the flowers of this vegetable; because the beans were offered to the dead Pythagoras asked his students not to eat them; another reason the beans were not eaten was because they were used for balloting in government elections." Original Italian Text: "Queste pastine sogliono farsi per la commemorazione dei morti e tengono luogo della fava baggiana, ossia d'orto che si usa in questa occasione cotta nell acqua coll osso di prosciutto. Tale usanza deve avere la sua radice nell antichita piu remota poche la fava si offeriva alle Parche, a Plutone e a Proserpina ed era celebre per le cerimonie superstiziose nelle quali si usava. Gli antichi Egizi si astenevano dal mangiare, non la seminavano, ne la toccavano colle mani, e i loro sacerdoti non osavano fissar lo sguardo sopra que sto legume stimandolo cosa immonda. Le fave, e su prattutto quelle nere, erano considerate come una funebre offerta, poiche credevasi che in esse si richiudes sero le anime dei morti, e che fossero somiglianti alle porte dell'Inferno. Nelle feste Lemurali si sputavano fave nere e si percuoteva nel tempo stesso un vaso di rame per cacciar via dalle case le omre deglie antenati, i lemuri e gli Dei dell'inferno. Festo prtende che sui fiori di questo legume siavi un segno lugubre e l'uso di offrire le fave ai morti fu una dell ragioni, a quanto si dice, per cui Pitagora ordino a suoi discepoli di astenersene; un altra ragione era per proibir loro di immishiarsi in affari di govrno, facendosi con le fave le scrutinio nelle elezioni."
