Ricciarelli (Tuscan Christmas almond cookies with bitter and sweet almonds, sugar and egg whites)

Ingredients

For cookie paste
300 grams (about 10 1/2 ounces) sweet almonds
30 grams (about 1 ounce) bitter almonds (10 per cent of the total amount of almonds)
200 grams (about 7 ounces) sugar
3 egg whites (not the extra large eggs)
Half a teaspoon of baking soda
2 tablespoons icing sugar

Wafer sheet for lining pan

For dusting
icing sugar

300 gr mandorle sbucciete
30 gr (10%) di mandorle amare
200 gr zucchero
3 chiare d'uova (non giganti)
mezzo cucchiaino di bicarbonato
zucchero a velo
lo aggiungo fogli di ostia da mettere come base sulle teglie



Directions

Chop fine the sweet and bitter almonds with the sugar.

The mixture can be put in a jar and kept in the fridge for later use.

Add the egg whites and mix well (if one is not in a hurry one can keep the cookie paste for a day or two in the fridge).

When the cookies are ready to be completed add two tablespoons of icing sugar to the dough and the baking soda.

Work the cookie paste very well (the resulting marzipan is sticking).

Take a piece of the cookie paste and make a small ball, place it on a cookie sheet, and then flatten it out a bit. This last step includes the use of a bowl of cold water to moisten the hands each time one forms the ball with the sticky paste to make the ricciarelli.

Place the ricciarelli a fair distance from each other on the cookie pan [lined with a large wafer sheet], as the cookies will expand.

Bake at 180 degrees C for 10 minutes.

When cold sprinkle the cookies with icing sugar.



One can add extra bitter almonds if one enjoys their flavor, one can also add some grated orange peel, but this is not the traditional method of doing the cookies.

o Tritare bene le mandorle dolci, amare e lo zucchero, la farina che si ottiene puo essere messa in barattolo e conservata in frigo se si vuole averta pronta per qualsiasi occasione.

o Aggiungere i bianchi d'uovo e amalgamare bene (se non c'e fretta si puo tenere per uno due giorni l'impasto in frigo.

o Quando si decide didare fiato alle trombe aggiungere due cucchiai di zucchero a velo e il bicarbonato. Girare e lavorare bene se possibile anche con le mani (il marzapane e appiccicoso).

o L'ultima fase prevede l'uso di una bacinella di acqua fredda per inumidirsi le mani ogni volta che si fa una pallina che adagiata sulla cialdda e leggemente schiacciata prende la forma del ricciarello, e bene considerare la distanza tra le palline perche in cottura lievitano.

o In forno a 180 C per 10 minuti

Appena freddi si cospargono di rucchero a velo.

N.B. Secondo il gusto si puo variare la dose delle mandorle amare a me piace abbastanza marcato perche esalta il sapore della mandorle oppure si puo aggiungere.
