Papassinas (Sardinian mostaccioli-style cookies with almonds, walnuts, raisins, orange and lemon zest)

500 grams flour
200 grams almonds, roasted and chopped
200 grams walnuts, chopped
300 grams sugar
200 grams butter, melted
2 egg yolks
Finely grated zest of 1 orange
Finely grated zest of 1 lemon


o Mix dry ingredients with wet ones and work into cookie dough.

o Roll dough out. Cut diamond-shaped cookies.

o Place on a cookie sheet lined with parchment paper.

o Bake in moderate oven until ready.
