Precious cookies/Biscotti Preziosi (with walnuts and raspberry jam)

1/2 cup butter
1/4 cup sugar
1 cup flour
2 tsps lemon juice
1 egg white
2 cups finely chopped walnuts
1/4 cup raspberry jam


1. Cream butter & add sugar beating until creamy

2. Add in flour & lemon juice & mix well

3.With hands roll dough into 1 inch balls

4. Dip balls in egg white

5. Roll balls in thick layer of nuts & pat to re-form the balls

6. Bake 5 minutes at 350 degrees

7. Remove from oven and make little dents on top of balls using a melon scoop, flattening balls slightly, & reshaping rounds if necessary

8. Bake cookies another 10 minutes.

9. Remove from oven & let cool a few minutes

10. Fill dents with a little raspberry jam.


Can be made into smaller or slightly larger balls for cookies of a different size as desired. Baking time may need to be adjusted.
