Marisa's Italian Almond Biscotti (with almonds, raisins, lemon and orange zest )

1 cup roasted almonds
2 cups flour
2 teaspoons Making baking powder
Pinch of salt
Pinch of cinnamon
1/2 cup vegetable oil
1/2 cup sugar
1/4 cup brown sugar
2 eggs
1/4 cup raisins
1 tablespoon finely grated lemon zest
1 tablespoon finely grated orange zest

Egg wash
1 egg with a spoon of water

Zest of 1 lemon, finely grated (dried in oven for about 5 minutes)


o Preheat oven to 350 F degrees.

o Mix dry ingredients.

o Mix wet ingredients.

o Shape into 2 logs -- about 4 inches wide, 1 inch high. Flatten a little.

o Place logs on a greased cookie sheet (or one lined with parchment paper.

o Bake until the dough is cooked (about 25 minutes).

o Cut the logs into slices about 1/2 inch thick.

o Return to oven and cook for about 15 minutes.
