Ingredients
1 3/4 cups of almonds then chop
12 oz sugar
6 or 7 eggs
8 oz oil
4 cups flour
3 tablespoons Magic baking powder
1 tbsp Almond extract
Directions
Roast almonds for 5 to 10 min. at 375? let cool
Sift flour and magic powder in a bowl
Beat sugar, eggs, Almond extract and oil till smooth in a large bowl
Slowly add flour to mix stirring with a fork
When too thick continue with wooden spoon until smooth
Fold almonds into batter
Divide batter onto 2 cookie sheets
Making sure you leave an empty space in the middle of the cookie for expansion
Bake at 350? for 15 min. until slightly brown top and bottom.
Remove and put other cookie sheet into oven.
Remove slabs and cut into ?? place on cookie sheet and cook at 400? for 5 min. till brown top and bottom.
