Southern Italian chocolate almond cake
Mary's Chocolate Almond Cake (using vegetable oil, eggs, cocoa powder and roasted almonds)

Ingredients

For cake batter
4 extra large eggs
1 1/4 cups sugar
1/3 cup [Fry's premium] cocoa powder
2/3 cup vegetable oil
2 teaspoons sweet almond extract
1/2 cup milk
1 1/2 cups flour
1 tablespoon baking powder
1 cup freshly ground roasted almonds

For decoration
about 1/8 cup icing sugar (for dusting)



Directions

Preheat oven to 350 degrees F.

Grease a 9 inch tube pan.

Using an electric mixer, beat eggs.

Add sugar (Do not cream the eggs and sugar, mixing for about 1 minute is sufficient).

Add cocoa powder.

Add vegetable oil. Mix well.

Add almond extract.Mix well.

Add milk. Mix well.

Add flour. Mix well.

Add baking powder. Mix well.

Slowly add freshly ground roasted almonds. Mix well.

Place cake batter in a greased 9 inch tube pan.

Bake at 350 degrees F for about 35 to 40 minutes (The cake is ready when a skewer inserted in it comes out dry).

Cool.

Before serving dust with icing sugar.




Notes

This recipe was inspired by the many Southern Italian-style cakes I have made over the years which use vegetable oil instead of butter. This style of cake is very easy to do, and fun to eat. Photo: Mary Melfi.
