chocolate walnut cake
Mary's Chocolate Walnut Cake (using vegetable oil; flavored with vanilla extract)

Ingredients

For cake batter

4 extra large eggs
1 1/2 cups flour
1 cup coarsely ground walnuts
1 tablespoon baking powder
1 1/4 cups sugar
1/4 cup cocoa powder
1/2 cup milk
1/2 cup vegetable oil
1 teaspoon vanilla extract

For decoration

about 1/8 cup icing sugar for dusting



Directions

1. Preheat oven to 350 degrees F.

2. Grease a 9 inch tube pan.

3. Using an electric mixer, beat eggs.

4. Add sugar and cocoa powder. Mix well.

5. Add vanilla extract.

6. Add oil. Mix well.

7. Add milk. Mix well.

8. Add coarsely ground walnuts. Mix well.

9. Add flour. Mix well.

10. Add baking powder. Mix well.

11. Place cake batter in the greased tube pan.

12. Bake at 350 degrees F for 45 to 50 minutes (The cake is ready when a skewer inserted in it comes out dry).

13. Cool.

14. Before serving dust with icing sugar.




Notes

This cake was inspired by the many Southern Italian-style cakes I have made over the years that use vegetable oil instead of butter. It's very easy to do, and in my opinion, tastes very good. Obviously, this is not a traditional recipe, but just my attempt at having fun.... Photo: Mary Melfi.
