Italian banana fudge bars
Pastini di Banane (Italian banana fudge nut bars using butter and eggs)

Ingredients

for batter*
1/3 cup butter, melted
3 tablespoons cocoa
1 cup sugar
1/2 cup flour
1/4 teaspoon salt
2 eggs, beaten
1 teaspoon vanilla extract
1 tablespoon milk
1 teaspoon baking powder
1 cup ripe bananas, mashed
1 cup nuts, chopped

Equipment needed
8 x 8 x 2 inch baking pan

* makes 12 bars



Directions

Sift flour, baking powder and salt together. Put aside.

Mix cocoa, sugar and butter together.

In a separate bowl combine eggs, vanilla, and milk.

Combine egg-mixture with cocoa-mixture.

Add flour mixture, mixing thoroughly.

Stir in mashed bananas and nuts. Blend well.

Pour the batter into a well-greased baking pan.

Bake at 350 degrees F for about 50 minutes.

Remove from oven.

Cool.

Before serving cut into 12 bars.




Notes

These fudge bars are thick & sweet. For those who like bananas this is a nice enough as the banana flavor is dominant; for those who don't like this fruit, this dessert should be avoided. Comments and photo: Mary Melfi
